Ladies and gentlemen, forget EVERYTHING you thought you knew about mutton tikka.<\/p>\n

This mutton tikka recipe I’ve developed is the simplest and tastiest version of mutton tikka I’ve ever had. \u00a0Considering that I consume a whole heck of a lot of tikka every Eid-ul-Adha, that is definitely saying something. \u00a0Oh, and, beef lovers, rejoice. \u00a0You can easily use the same recipe for beef, just increase your cook time as needed to make sure your meat is properly tender.<\/p>\n

The best thing about this mutton tikka recipe is that it requires very little active work time, which leaves you free to work on cooking another dish, or finish cleaning and organizing a huge pile of meat from Qurbani<\/em>.<\/p>\n

For the uninitiated, Qurbani is the ritual sacrifice that we offer every year on Eid-ul-Adha. \u00a0It is done to commemorate the sacrifice of the Prophet Ibrahim (Abraham) Alayhi Salaam<\/em> (upon him be peace). \u00a0Ibrahim (AS) was commanded by Allah to sacrifice his son, Ismael (Ishmael) Alayhi Salaam<\/em>\u00a0(upon him be peace). \u00a0When he performed the sacrifice, he found that Allah had replaced Islamael (AS) with a ram. \u00a0Every year, Muslims sacrifice an animal\u2014one they already own or one they recently purchased just for the sacrifice. \u00a0The meat is then divided into portions, one portion for the family of the person who offered the sacrifice, one portion to give as a gift to family and friends and one portion for charity. \u00a0Some opt to give the entirety of their sacrifice to charity.<\/p>\n

Every year, around this time, there is a special market that comes to every major city where people can go to purchase animals for sacrifice. \u00a0The\u00a0bakra mandi,<\/em> as it is known in these parts, is very popular for adults and children alike to look at the different kinds and breeds of animals from all over the country.<\/p>\n

No matter how advanced Pakistan has become, no matter how far in the city you go, there is a connection between man and animal that can\u2019t be severed.\u00a0 <\/span>I suspect that this fascination and love for animals has something to do with our agricultural roots\u2014you can take us out of the farm, but you can\u2019t take the farm out of us. \u00a0In Karachi, they even have a catwalk for the goats on sale.<\/p>\n

Typically, instead of purchasing an animal on our own, we opt to pay for a portion of sacrificing a bull as a part of a group sacrifice\u2014these group sacrifices are organized by our local masjid.\u00a0 <\/span>My husband has been volunteering with the masjid since he was a teenager in helping them purchase the animals and organizing and managing the group sacrifices.\u00a0 <\/span>As a result, he\u2019s racked up a lot of experience in this area and is often called upon for his advice in goat shopping.<\/p>\n

And yes, God help me, but he actually loves going goat shopping. \u00a0Take him to Centaurus Mall, and he can’t wait to get out of the place. \u00a0Send him to bakra mandi<\/em> and he’ll be gone for hours.<\/p>\n

I don’t get it.<\/p>\n

Becky and the Goat<\/h2>\n

Two years ago, we decided to do one group sacrifice with the masjid and sacrifice one goat on our own at home.\u00a0The logistics of actually keeping a goat in my HOUSE hadn\u2019t occurred to me at that time.<\/p>\n

Before I knew it, I was face-to-face, or rather, face-to-snout with my new housemate.\u00a0 <\/span>He was light brown with white spots, a cute little specimen of the Makhi Cheeni<\/a> breed.<\/p>\n

Where to keep him?\u00a0 <\/span>We kept him in the front yard for a while, but it was hard to get the car in and out with him there.\u00a0 <\/span>My husband then led the goat through our house (yes, a goat walked through my house) and out the back door.<\/p>\n

When we got him settled in the backyard, I noticed little round brown balls all around him.<\/p>\n

Oh.\u00a0 <\/span>I\u2019d forgotten that there would be poop involved.<\/p>\n

The kids came and had a look at him, everybody petted him and we all ooh and ahhed over the animal, and then it was time for lunch so we all came inside.<\/p>\n

The goat did not like this.<\/p>\n

He bleated \u2026and bleated\u2026 and bleated.<\/p>\n

Maybe he was hungry?\u00a0 <\/span>My sister-in-law (“Appa”) told me they can eat warm roti, so I fed him one which he promptly gobbled up.\u00a0 <\/span>While I made another roti for the goat, he was content to play with the kids and didn\u2019t complain.\u00a0 <\/span>But after he was fed and the kids went back inside, he started bleating again.<\/p>\n

We quickly realized that the goat wasn\u2019t hungry anymore, he just wanted attention.\u00a0 <\/span>Lots of attention.<\/p>\n

My husband explained that goats like this are often raised by farming families, they\u2019re social animals and are not used to being alone.<\/p>\n

\u201cThis won\u2019t do.\u00a0 <\/span>The goat is scared.\u00a0 <\/span>I\u2019m gonna sleep outside tonight to take care of it,\u201d my husband said.<\/p>\n

\u201cYou\u2019re going to sleep\u2026outside?\u00a0 <\/span>With the goat?\u201d\u00a0 <\/span>I spluttered.<\/p>\n

\u201cMe too!\u00a0 <\/span>I\u2019m going to sleep outside too!\u201d\u00a0 My younger son (“Kit”<\/span>) jumped up and down.<\/p>\n

\u201cYay!\u00a0 <\/span>We\u2019re going to sleep outside with the goat!\u201d\u00a0 <\/span>My older son (“Beau”) cheered.<\/p>\n

I\u2019ve been usurped by a farm animal.<\/p>\n

Luckily, my father-in-law came to the rescue.\u00a0 <\/span>He assured us that nobody needed to sleep outside\u2014the goat would be just fine once he adjusted. \u00a0And, after some time, we found that the gentle beast had settled down and made himself comfortable.<\/p>\n

The next morning, my husband brought home a bucket of green leaves and some brown substance I couldn\u2019t identify.\u00a0 <\/span>Presumably, this was what the goat ate.\u00a0 <\/span>He put it in the wide basin set on a stool that we were using as a makeshift trough.<\/p>\n

The goat sniffed the food curiously, gave it a taste, then promptly overturned the basin with his snout, scattering leaves and brown stuff everywhere.<\/p>\n

Apparently, the food didn\u2019t meet with the diner\u2019s approval.<\/p>\n

The goat then proceeded to bleat until I made him another roti and fed it to him, still slightly warm from the tawwa.<\/p>\n

\u201cYou are a sassy one, aren\u2019t you?\u201d I couldn\u2019t help but laugh as I stroked his side.<\/p>\n

In just two days we\u2019d already become attached.\u00a0 <\/span>And so I couldn\u2019t help but feel a twinge in my heart when it came time to take him away to sacrifice him.\u00a0 <\/span>Beau turned away and didn\u2019t look.\u00a0 <\/span>Kit was curious and watched them lead him away, then pressed his face into my stomach and cried.<\/p>\n

I thought, if this is how we feel for something that we only knew for a few moments, imagine how Ibrahim (AS) felt sacrificing his beloved son for the sake of Allah.\u00a0 <\/span>It was only Allah\u2019s mercy that Ismael (AS) was replaced with a ram.\u00a0 <\/span>This sacrifice represents that sacrifice and the one we must make every day.<\/p>\n

In this life, each of us is called upon to sacrifice our dunya<\/i> in different ways\u2014our baser desires, our wealth, our ambitions, our comfort, etc.\u00a0 <\/span>The tests are different for each of us, but there comes a point when we all have to choose between our will and the Will of Allah.\u00a0 <\/span>Maybe we will have to give up a job we really want because there is haram<\/i> in it, maybe we will have to give up someone we desire to marry because they are not good for our deen<\/i>, maybe we will have to give up a hobby that brought us pleasure because it is sinful.\u00a0 <\/span>Whatever our test, we will have to sacrifice something our heart is attached to, because we want to be MORE attached to Allah.\u00a0 <\/span>So every year, we sacrifice an animal, not for the sake of eating meat\u2014but rather to remind ourselves that Allah\u2019s Will is above our own.\u00a0 <\/span>Every day, when we live our lives according to Islam, we are sacrificing ourselves, and submitting ourselves to the Will of Allah.<\/p>\n

Mutton Tikka Recipe Notes<\/h2>\n

This mutton tikka recipe is pretty basic in its flavors. \u00a0Because this is an Eid recipe, I’ve kept the salt, spice and tartness at a very normal (munasib<\/em>) level to accommodate the tolerance of more and varied people. Worry not, this recipe is a crowdpleaser. \u00a0My family members stand on different points of the spectrum on how spicy or how tart they like things, but every single one of them personally approved of the Mutton Tikka. \u00a0However, I would definitely recommend serving this with lemon wedges and chaat masala on the side so that\u00a0chatkhora<\/em> people (aka ME) can easily add more as they like.<\/p>\n

    1. \n\t\t\t\t\t\t\t\t\t\t

      Chop onion and the green bell pepper and soak them in the apple cider vinegar for 10 minutes, then remove and set aside for later.  (I store them in separate containers in the fridge.)<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    2. \n\t\t\t\t\t\t\t\t\t\t

      In the vinegar, add meat, salt, ginger paste and garlic paste.  Allow it to marinate for 2 hours in the fridge.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    3. \n\t\t\t\t\t\t\t\t\t\t

      Put the meat and vinegar mixture in a small pot.  Bring to a boil, then cover and decrease to a simmer and cook on a low flame until the vinegar has evaporated and the meat is cooked through\u2014approximately 1-2 hours.  <\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    4. \n\t\t\t\t\t\t\t\t\t\t

      Heat 2 tbsp cooking oil in a frying pan over medium low heat.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    5. \n\t\t\t\t\t\t\t\t\t\t

      Add onion, tomato and meat and fry until the tomatoes start to break down.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    6. \n\t\t\t\t\t\t\t\t\t\t

      Add the green bell pepper and the green chilli and continue frying until the green bell pepper is soft but doesn't lose too much of its shape.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    7. \n\t\t\t\t\t\t\t\t\t\t

      Season with black pepper, chat masala and lemon juice.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    8. \n\t\t\t\t\t\t\t\t\t\t

      Taste and adjust seasonings if desired.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t
