This is a recipe for the best loose leaf chai tea you will ever make, along with a story about the worst one I ever made.<\/em><\/p>\n

\"Best<\/p>\n

We had guests over, and I was nervous. \u00a0This was not unusual. \u00a0I was always nervous when guests came over. \u00a0But what was not usual was the news we received that morning.<\/p>\n

My mother-in-law\u2019s test results were back, the cancer had returned with a vengeance. \u00a0The original tumor in her large intestine regenerated, and so had the metastasised legions in her liver. \u00a0The prognosis wasn\u2019t just bad, it was freaking catastrophic.<\/span><\/p>\n

<\/p>\n

But we didn\u2019t have time to discuss the results, or even to mentally process them. \u00a0My mother-in-law\u2019s cousins were expected to come over within half an hour, so it was imperative that we get everything prepared for tea as quickly as possible. \u00a0While they were my mother-in-law\u2019s first cousins, they lived abroad and so rarely came to our home that this was considered a formal occasion. \u00a0I wanted to make sure everything was perfect so that, at least with this visit, she could be at ease. \u00a0They did not know about her illness, and she wanted to keep it that way.<\/span><\/p>\n

\u201cI don\u2019t want anyone making a fuss over me,\u201d she said when she made her wishes known. \u00a0<\/span><\/p>\n

Things started out smooth enough, I served my homemade chocolate cake with chocolate sauce; everyone I serve it to loves it. \u00a0And they did love it\u2026well, except that one cousin that didn\u2019t like chocolate. \u00a0AT ALL. \u00a0But that\u2019s okay! \u00a0I would salvage things with my chai. \u00a0I make the best loose leaf tea in my family (well, except for my husband, who taught me the technique, but I\u2019m usually the one serving it, so he doesn\u2019t count). \u00a0Everyone loves my chai, these cousins would love my chai, and it would be awesome. \u00a0And I was going to increase the awesomeness, because my sister-in-law recently told me that changing the water-to-milk ratio from 1:1 to 1.5:1 makes the tea even better. \u00a0<\/span><\/p>\n

Okay, so 10 cups of tea, with the 1.5:1 ratio, that would be 6 cups of water to 4 cups of milk. \u00a0I measured the water and the milk precisely in the mugs we usually use to drink tea in and mixed it together in a saucepan. \u00a0I was about to turn the flame on when I realized, oh shoot, this is formal company, and formal company is served tea in the teacups from our formal china set, much smaller than our usual tea mugs. \u00a0I only need to make 5 cups of tea, not 10. \u00a0But now the milk and the water are already mixed, and I can\u2019t separate them\u2026ok I\u2019ll just measure out half and transfer to a different saucepan. \u00a0<\/span><\/p>\n

Whew, great save. \u00a0Now everything is going to be awesome. \u00a0They\u2019re going to love the tea and my mother-in-law is going to be so proud, and she\u2019s going to be like, \u201cThat\u2019s our Becky. \u00a0She didn\u2019t know anything when she came here, but she learned so much.\u201d<\/span><\/p>\n

Oh crud. \u00a0Crud, crud, crud. \u00a0I lost count of the cups. \u00a0Did I put in 5 or 6? \u00a0I can\u2019t figure out how much tea to put in unless I know EXACTLY how many cups I have in here.<\/span><\/p>\n

\u201cBecky, how long till the tea\u2019s ready?\u201d my mother-in-law asked from the drawing room.<\/span><\/p>\n

\u201cUm, just a few minutes!\u201d<\/span><\/p>\n

Oh God, oh God. \u00a0Okay, I\u2019ll just put in enough tea for 5 cups and if it looks too light, I\u2019ll add more. \u00a0<\/span><\/p>\n

Why is it taking so long? \u00a0It\u2019s not supposed to take this long. \u00a0Maybe I really DID put in 6 cups. \u00a0Okay, I\u2019ll just add a bit more tea.<\/span><\/p>\n

A few minutes later, the tea was ENTIRELY the wrong color and wayyy too dark. \u00a0I tasted it. \u00a0Blech, it was waaaay too bitter. \u00a0There wasn\u2019t enough milk in the mixture.<\/span><\/p>\n

If I add milk now, it\u2019s going to take even LONGER to get ready. \u00a0Okay, don\u2019t panic, just think, Becky. \u00a0<\/span><\/p>\n

And suddenly the answer was clear. \u00a0I\u2019d simply use tea whitener. \u00a0It would make up for the milk deficiency and lighten the color of the tea. \u00a0I dumped a few scoops of Nestle Everyday in the mixture until the tea looked pretty enough, sent a quick prayer to Allah, then brought out the tea. \u00a0(I was too nervous to taste it again.)<\/span><\/p>\n

I sat down and took a small helping of the food we set out.<\/span><\/p>\n

\u201cThis cake is so delicious, Rebecca,\u201d one of the cousins said. \u201cBaji tells us you made it?\u201d<\/span><\/p>\n

\u201cYes I did, aunty. \u00a0Thank you, I\u2019m glad you like it.\u201d<\/span><\/p>\n

The cousins sipped their tea.<\/span><\/p>\n

\u201cIs this tea made with powdered milk?\u201d \u00a0One of the other cousins asked.<\/span><\/p>\n

\u201cI don\u2019t see why it should be, we had plenty of fresh milk for tea,\u201d my mother-in-law responded, glancing at me.<\/span><\/p>\n

I quickly stuffed a piece of chocolate cake in my mouth, and chewed as daintily as I could.<\/span><\/p>\n

\u201cHmm, there is definitely a hint of Nido in here, I\u2019m sure,\u201d the cousin started speculating.<\/span><\/p>\n

\u201cAre you enjoying your visit, Aunty?\u201d \u00a0I quickly changed the subject, addressing the cousin who liked the cake.<\/span><\/p>\n

\u201cOh, yes, we always have such a pleasant time here\u2026\u201d<\/span><\/p>\n

I continued to chat with her about her life abroad, and the others chatted amongst themselves, and the subject of the tea was, thankfully dropped. \u00a0<\/span><\/p>\n

Until one of the aunties went to refill their cup and found the teapot empty. <\/span><\/p>\n

\u201cOh, would you like me to make you some more?\u201d \u00a0I asked.<\/span><\/p>\n

\u201cYes, that\u2019d be lovely.\u201d<\/span><\/p>\n

I went into the kitchen and made another two cups, put it in the teapot and brought it out for her. \u00a0Until I realized that they ALL wanted refills.<\/span><\/p>\n

\u201cOh were there only just the two cups?\u201d<\/span><\/p>\n

\u201cUm\u2026no, of course not,\u201d I stuttered. \u00a0\u201cThere\u2019s more in the kitchen, silly me, I\u2019ll just\u2026be right back.\u201d<\/span><\/p>\n

How much chai did these people drink?!?!<\/span><\/p>\n

I quickly made another batch, feeling like an idiot every minute. \u00a0DUH, I should have just made the whole batch of 10 in the first place. \u00a0Now they know I\u2019m in here making another batch and it\u2019s so embarrassing.<\/span><\/p>\n

I brought out the other batch just in time to catch the tail end of a hushed conversation.<\/span><\/p>\n

\u201cShe\u2019s still new to this, she\u2019s never done this before,\u201d my mother-in-law was saying to one of her cousins.<\/span><\/p>\n

\u201cMy daughters were taking care of the whole house by the time they were in matric,\u201d the cousin was replying.<\/span><\/p>\n

I felt my cheeks heat up with embarrassment. \u00a0<\/span><\/p>\n

\u201cUm, excuse me one moment, I think the baby is crying upstairs,\u201d \u00a0I set down the tea pot, turned tail, and ran to my room as fast as I could (paper napkins may have flown in my wake).<\/span><\/p>\n

Now, in the lady\u2019s defense, I\u2019m sure she wasn\u2019t saying something bad about me in comparison, it\u2019s practically a rule that Pakistani mothers do not spare an opportunity to brag about their daughters. \u00a0But the conversation was so much the complete <\/span>opposite<\/span><\/i> of what I had been hoping for.<\/span><\/p>\n

I closed the door behind me. \u00a0My younger son was still, thankfully, asleep. \u00a0I put my head in my pillow to muffle out the sound and I cried. \u00a0I cried and I cried and I cried.<\/span><\/p>\n

I cried because I DID KNOW HOW TO MAKE TEA, but I screwed it up because I was nervous, and now they all think I\u2019m an idiot.<\/span><\/p>\n

I cried because WHY did this have to be so hard for me? \u00a0Why couldn\u2019t I just get it RIGHT the first time for once?<\/span><\/p>\n

I cried because I just wanted my mother-in-law to be happy, and I only succeeded in embarrassing her.<\/span><\/p>\n

I cried because I had the awful thought of having to face this sort of thing alone one day, and how was I ever going to get this right without her around? \u00a0Oh Allah, surely you understand, I NEED her here!<\/span><\/p>\n

After I realized that I had probably spent way too much time upstairs, I washed and dried my face and made my way downstairs, just in time to see the guests getting ready to leave.<\/span><\/p>\n

\u201cWhere were you?\u201d \u00a0My mother-in-law whispered to me.<\/span><\/p>\n

\u201cUpstairs,\u201d I answered quietly.<\/span><\/p>\n

She turned to look at me, her eyes missing nothing. \u00a0\u201cYou were crying, weren\u2019t you?\u201d<\/span><\/p>\n

\u201cI\u2019ll tell you later,\u201d \u00a0I whispered back, and we said our salaams and goodbyes to our guests. \u00a0I busied myself in cleaning up, and when she didn\u2019t mention it again, I thought that was the end of it. \u00a0Until we all sat down to dinner that night.<\/span><\/p>\n

\u201cSo why did you hide away upstairs today?\u201d \u00a0She asked me directly.<\/span><\/p>\n

\u201cI\u2026er\u2026that is\u2026I\u2026,\u201d \u00a0unable to come up with a partial truth that would suffice, I ended up spilling the whole, awful story of how I screwed up the measurements and I snuck in the Everday and then didn\u2019t make enough the first time and then didn\u2019t make enough AGAIN the second time. \u00a0First she chuckled, then she giggled, and then she laughed. \u00a0She laughed and laughed until tears rolled down her cheeks and she was almost out of breath.<\/span><\/p>\n

\u201cSee, Ammi?\u201d \u00a0\u00a0I said with a self-deprecating smile, \u201cYou could have gotten a well-trained daughter-in-law anywhere in Pakistan. \u00a0But with me, your IMPORTED daughter-in-law, at least you don\u2019t need a television. \u00a0I\u2019m free entertainment.\u201d<\/span><\/p>\n

She was smiling when she looked at me, her eyes light with mirth, but her tone was honest when she said, \u00a0\u201cYes, you are certainly one of a kind.\u201d<\/span><\/p>\n

And I thought to myself, that if my screw-up could make her laugh on a day like this, then maybe it wasn\u2019t so bad, after all.<\/p>\n

    Instructions<\/h3>\n\t\t\t\t

    1. \n\t\t\t\t\t\t\t\t\t\t

      Put the water and milk in a medium saucepan over medium-low heat. Add in the cardamoms and sugar and, using a ladle, take a ladleful of the mixture out and slowly allow it to pour back into the saucepan. Keep doing this until the milk is a bit frothy and the cardamom and sugar are well incorporated.  <\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    2. \n\t\t\t\t\t\t\t\t\t\t

      Let the milk come to a boil, wait for it to form a skin and start to rise up.  
      <\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t

    3. \n\t\t\t\t\t\t\t\t\t\t

      Add the tea and quickly lower the flame (or else the tea will boil over) so that the mixture is at a light simmer. Again, use your ladle to take out some of the milk and then pour it back in. This will expose the tea to more air, bringing out its flavor. It will also further incorporate the flavor of the cardamom. Keep doing this until the tea is a light, golden-brown color.

    4. \n\t\t\t\t\t\t\t\t\t\t

      At this point stop, increase the heat to bring it to a quick boil again (it should start to rise up once more) then remove from heat and pour through a strainer directly into cups (or a tea pot).

      Depending on the fat content of your milk and the strength of the tea leaves you\u2019re using, you may have to adjust the amount of tea you put in, but these ratios are a great starting point.<\/span><\/p>\n\t<\/div>\n\t\t<\/div>\n<\/div>\n

      1. \u00a0When serving formal company, DON\u2019T risk making something new for the first time or trying a new technique. \u00a0Better to stick to the tried and true, else you risk making a mess of things!<\/span><\/li>\n<\/ol>\n
