In Pakistan, I was introduced to the concept of a heart-attack guest.\u00a0 Okay, so nobody else calls them that except for me, but a heart-attack guest is basically someone who drops in unexpectedly around a meal time.\u00a0 I used to panic over whether or not I\u2019ve made enough food, and whether or not the food is good enough to serve to guests and that is from whence the \u201cheart-attack\u201d comes.<\/p>\n

Unexpected mealtime guests are so common in Pakistani homes, that most women (like my mother and late mother-in-law) barely bat an eyelash.\u00a0 <\/span>Within moments, the current food is converted into something more presentable, or they will pull out the pressure cooker and cook something delicious and wonderful in minutes.\u00a0 <\/span>It is truly a thing to behold, but sadly, a skill that does not come innately to me.\u00a0 <\/span>I\u2019m still a \u201cgreen\u201d girl, and there\u2019s a bit of a learning curve in this Desi Cooking Magic.<\/p>\n I\u2019ve learned the ropes a bit, and now I have a few emergency dinner recipes in my arsenal that I can use.\u00a0 <\/span>I decide what to make based on what I have on hand, and how much time I have before the guest arrives.\u00a0 <\/span>Some guests give a bit of a warning, calling you just before they leave the house.\u00a0 <\/span>Others will call while they are en route, and for still others, the only advanced notice you get is the doorbell.<\/p>\n Recently, a close friend of mine called me just as I was putting the finishing touches on dinner.\u00a0 <\/span>It turned out she was in the area, and wanted to drop by.<\/p>\n \u201cDon\u2019t do anything special for me, okay?\u00a0 <\/span>I\u2019ll just have whatever you\u2019re having,\u201d she said.<\/p>\n Yeah.\u00a0 <\/span>Right.\u00a0 <\/span>That is so<\/i> not happening.<\/p>\n \u201cDon\u2019t worry about it, just get over here,\u201d I replied, avoiding having to agree to anything.<\/p>\n What my beloved friend forgets is that, even though I\u2019m an American, I was raised by a Pakistani mother<\/a>.\u00a0 <\/span>And anyone with a Pakistani mom knows that when company comes over, there must be meat on the table.\u00a0 <\/span>This is a given.\u00a0 <\/span>Anything less is horribly bad manners.\u00a0 <\/span>Thankfully, my friend had no idea that we were originally planning a super simple dinner of Tehari (Spiced Rice and Potatoes)<\/a>.<\/p>\n I quickly took out a portion of chicken from the freezer, fired up the pressure cooker, and just like that, this authentic chicken curry dinner was served.\u00a0 <\/span>(Okay, so in reality, it took me a bit more time to do it that day because my kiddos were not cooperating, but still!\u00a0 <\/span>Dinner was served relatively<\/i> on time.)<\/p>\n As for the Desi chicken<\/a> part of this authentic chicken curry recipe, let me explain.\u00a0 <\/span>Lately, in Pakistan, there has been so much controversy surrounding broiler chicken and the feed given to the chicken, a well as possible health risks related to eating commercially grown chicken.\u00a0 <\/span><\/p>\n Because of the health conditions of certain members of our family, we can\u2019t cut chicken out of our diet.\u00a0 <\/span>What we have done instead is attempt to find the most authentic Desi (domestically raised) chicken we can find in our area.\u00a0 <\/span>I know that many will argue that a lot of farmers give so-called \u201cDesi\u201d chicken the same feed.\u00a0 <\/span>Obviously, we can\u2019t control every variable, but we try to buy from farmers we trust and places where we can see that the chickens are being kept in healthy conditions.\u00a0 <\/span>As the Prophet (PBUH) very wisely said:<\/p>\n \u201cTie your camel, and trust in Allah\u201d\u00a0 <\/span>(Hasan) [Jami At-Tirmidhi]<\/span><\/p>\n<\/blockquote>\n So we do what we can, and leave the rest to Allah, you feel me?<\/p>\n <\/p>\n Coming back to this bit of loveliness.\u00a0 <\/span>This authentic chicken curry recipe uses ingredients you most likely already have in your kitchen.\u00a0 <\/span>You do not have to use Desi chicken if you want to follow this recipe.\u00a0 <\/span>If you are using regular broiler\u00a0 <\/span>chicken, skip the first step in which the chicken is boiled, or if you do it, do it for a VERY short amount of time.\u00a0 <\/span>Broiler chicken gets tender VERY fast, so avoid cooking it for too long, or else the meat will fall right off of the bones, and it will kill the presentation of your dish.\u00a0 <\/span>The cooking time depends on what kind of chicken you are using, but you can use a pressure cooker if you want to speed things up.\u00a0 <\/span>Just make sure you know your cooker, and don\u2019t over cook the meat!<\/p>\n This recipe also freezes well, so you can cook a double batch and freeze half for later use.\u00a0 (Like for a day when you have absolutely NO lead time before someone comes over).\u00a0 Just store it in an air-tight, freezer-safe container.<\/p>\n When ready to reheat, defrost at room temp (or in the microwave if you’re in a rush) until it’s loose enough to transfer to a pot.\u00a0 Then reheat on the stove until it’s fully defrosted and comes to a boil.\u00a0 Try not to over-stir it because the meat will be very tender\u2014you don’t want it to break and ruin the presentation.<\/p>\n I hope you try out this authentic chicken curry recipe and that you guys like it, whether you make it for company, or just for your own family.\u00a0 <\/span>It\u2019s a great curry in that it\u2019s simple enough for regular home cooking, but with just that little bit of extra flavor that makes it a great dish to serve to your guests.\u00a0 <\/span>Good food with good
